Homemade granola recipe

There are a few items I no longer buy from the grocery store because I’ve learned to make them at home. Jam. Coffee creamer. Granola.

After my first batch years ago, I could not believe how ridiculously easy it is to make delicious granola at home. I use this base recipe from Cookies and Kate and tweak the ingredients.

This particular batch features honey, coconut oil, chopped walnuts, sliced almonds, hemp seeds, and shavings from a Manoa Chocolate Breakfast Bar.

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup walnuts
  • 1/4 cup hemp seeds
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract
  • 1/2 cup sliced almonds
  • 1/4 cup shredded, unsweetened coconut
  • 1/4 dark chocolate bar, chopped

Directions

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. Combine the oats, nuts, seeds, salt, cinnamon, oil, honey, and vanilla. Mix well.
  3. Spread granola onto the baking sheet and spread evenly.
  4. Bake for 10 minutes. Remove the pan, stir the mixture, then add the almonds and coconut and spread evenly. Return to the oven for another 10 minutes.
  5. Let the granola cool completely. Add chocolate and mix well. Store in an airtight container.

Note: I typically measure the oats, oil, and honey, then eyeball the rest.
