There are a few items I no longer buy from the grocery store because I’ve learned to make them at home. Jam. Coffee creamer. Granola.
After my first batch years ago, I could not believe how ridiculously easy it is to make delicious granola at home. I use this base recipe from Cookies and Kate and tweak the ingredients.
This particular batch features honey, coconut oil, chopped walnuts, sliced almonds, hemp seeds, and shavings from a Manoa Chocolate Breakfast Bar.
Ingredients
- 2 cups old-fashioned rolled oats
- 1 cup walnuts
- 1/4 cup hemp seeds
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 cup coconut oil
- 1/4 cup honey
- 1/2 teaspoon vanilla extract
- 1/2 cup sliced almonds
- 1/4 cup shredded, unsweetened coconut
- 1/4 dark chocolate bar, chopped
Directions
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- Combine the oats, nuts, seeds, salt, cinnamon, oil, honey, and vanilla. Mix well.
- Spread granola onto the baking sheet and spread evenly.
- Bake for 10 minutes. Remove the pan, stir the mixture, then add the almonds and coconut and spread evenly. Return to the oven for another 10 minutes.
- Let the granola cool completely. Add chocolate and mix well. Store in an airtight container.
Note: I typically measure the oats, oil, and honey, then eyeball the rest.
