Shortbread cookies

Simple, delicious, and incredibly addicting — my version of Ted Lasso’s signature treat.

Ingredients

2 1/4 cups flour
1/8 tsp. salt*
1 cup butter, softened
1/2 cup sugar
1/2 tsp. vanilla

Instructions

Preheat oven to 350 degrees. Butter and line a 9×13-inch pan with parchment paper.

Cream butter, sugar, and vanilla until light and fluffy.

Combine flour and salt, add to creamed mixture.

Mix until just blended. Mixture should be crumbly; do not overmix.

Press dough evenly into pan (I filled 3/4 of the pan). Prick dough all over with a fork.

Bake for 40–45 minutes or until golden brown. I used the convection oven setting and removed the pan after roughly 31 minutes.

Cool for 5 minutes before cutting into bars or squares.

*I bake with salted butter. Increase to 1/4 tsp. salt if using unsalted butter.
